August Sunday Feast at Tavolàta: Local Salmon

August’s Sunday Feast at Tavolàta celebrates the bounty of salmon that late summer brings to the Northwest. Chef Addam Buzzalini has a fantastic meal full of luscious salmon planned for the August 3rd dinner. Salmon will be served raw, smoked, poached, and seared alongside an array of seasonal produce. Dinner ends with a wonderfully summery blackberry dish!

First

Crudo & Merv’s Veggies with limoncello vinaigrette
Hot Smoked King Salmon Bruschetta with pickles and aioli
Panzanella Salad with heirloom tomatoes, Poached King Salmon, asparagus, and aged balsamic
Local Greens with Sockeye “Guanciale” and anchovy dressing

Second:

Poached Ivory Salmon with ricotta gnudi, zucchini, and salmon cracklins’
Risotto Milanese with Salmon Collar, bone marrow, and saffron

Third:

Saltimbocca with tomato crudo, fava bean sauce, and olive oil
Seared Sockeye with chanterelles, figs, green beans, and saba

Dinner will be served family style at the communal table (tavolàta) where seating is limited to 26 guests. Dinner begins at 6pm and the cost is $70 per person. Reservations are required. Please call 206.838.8008 to reserve your spot.
