Zach Chambers Named New Chef at Anchovies & Olives
Zach Chambers has been named the new chef of Ethan Stowell’s Anchovies & Olives in Seattle. Chambers replaces Charles Walpole, who left to pursue his own project, at this nationally acclaimed seafood focused restaurant.
Chambers, who holds a degree from the Culinary Institute of America, New York and spent time at The American Academy in Rome, Italy, began working for Stowell at his modern Italian restaurant, Tavolàta, in 2009. Prior to joining the Ethan Stowell Restaurant team, Chambers worked in the kitchen at New York’s famed Gramercy Tavern, as well as Spinasse and Olivar in Seattle.
The menu will continue to focus on seafood and showcase the gorgeous shellfish, fish, and fresh pastas that garnered the restaurant “Best New Restaurant” nods from both Bon Appetit and GQ magazines.
“My plan is to expand the menu a bit and give guests a few more options,” said Chambers. “Where Charles showcased a lot of East Coast seafood, I want to dig a little deeper into our local fish and give the menu more of a Pacific Northwest slant.”
“With the expansion of the menu, entrée sizes will become a little more traditional,” said Stowell. “We want the menu to be super accessible. If you want to swing by for a piece of fish or a bowl of pasta and call it dinner, that’s great. If you want to try a little of this and a little of that, that still works too.”
