ESR to Create New Restaurant for Four Seasons Hotel

We are thrilled to announce a partnership with Four Seasons Hotel Seattle. We’ll be creating a new restaurant concept to replace ART Restaurant & Lounge, set to open in late spring. The restaurant will bring Pacific Northwest cuisine to the heart of downtown Seattle for visitors and locals alike to enjoy.

“Ever since we closed Union in 2010, I’ve been waiting for the right opportunity to come back Downtown,” says Chef Stowell. “This is definitely it.”

Chef Stowell will conceptualize the menu and staff the kitchen, as well as help in the design process to develop the atmosphere of the new restaurant. Our Beverage Director, Sennen David, will create the wine and beer lists, as well as initiate a new cocktail program.

Chef Joe Ritchie, currently of Mkt., will move downtown to head the kitchen. Ritchie’s thoughtful cooking style—excellent ingredients, showcased in simple preparations—will shine at the new restaurant. Open for lunch and dinner, the restaurant will offer a gorgeous selection of shellfish from the region, a top-notch burger, and a smattering of classic appetizers along modern Pacific Northwest dishes.

“Ethan’s culinary creativity, combined with a Pacific Northwest dining concept and breathtaking setting, will provide a local, authentic dining experience for our guests,” said Ilse Harley, general manager Four Seasons Hotel Seattle.

“What excites us about the partnership is Ethan’s shared vision for a dining experience that brings the vibrancy and warmth of his Seattle neighborhood restaurants back downtown,” said Chairman of Seattle Hotel Group, Bruce McCaw. “We’ve been evaluating ways to refine the restaurant for the last couple years, and are looking forward to making our hotel the premier Downtown dining destination.”

The redesign will be lead by EDG Interior Architecture & Design, a highly regarded design firm that has previously created restaurant spaces for the Four Seasons in Los Angeles and Prague. Stowell will have a hand in the design process, choosing flatware and linens as well as paint colors and light fixtures, bringing his distinct style to the space.
