Scott graduated from Johnson & Wales University in 2012. While completing his degree he worked for Ken Oringer at Clio in Boston, Ma. He then moved on to work for Food & Wine best new chef 2013 Matthew Gaudet at Westbridge restaurant in Cambridge. After a short stint in Portland, he made his way up to Seattle as the chef at Tavolàta before opening Cortina. He was the opening Chef of Wolf in NYC and has now rejoined us in Washington to be the opening Chef of Tavolàta Spokane.

Best Meal Ever

While traveling in Marseille, France I discovered a butcher shop with a rotisserie in the front window. Too poor to purchase a whole chicken, I decided to get a pint of the potatoes soaking in chicken fat/juices underneath the chickens all day. Those potatoes ended up being the most delicious thing I had my entire trip. Unfortunately, the next day I could not figure out where the butcher shop was located or it's name. But it will live on in my memory.

Memorable Kitchen Disaster

Long story short: An extern at the restaurant I was working at cooked a burger for room service. It got plated and sent up to the room. 5 minutes later the room service steward gets a phone call that there is a piece of plastic in the burger. The burger comes back to the kitchen and we take the cloche off of the plate to take a look. The dumb butt extern forgot to take the burger out of the plastic wrap before he put it on the grill. The entire burger was wrapped in burnt plastic! Not to mention that the lady that ordered the burger was a hotel reviewer! FAIL
